Garlic & Herb-Rubbed Roasted Turkey

Ingredients

2 Tbsp Garlic Herb Seasoning (Grocery Dept)
3 Tbsp Sugar in the Raw Natural Cane Turbinado Sugar
1 (10-14 lb) Fresh Turkey
1/4 cup Basting Oil

You'll Need: Large roasting pan with rack

Directions

Two days before: Combine seasoning salt and sugar in small bowl.  Remove pop-up timer; loosen turkey skin at breast and drumstick. Using clean hands, rub 1/3 of mixture on turkey breast, 1/3 on legs and thighs and the remaining 1/3 inside turkey cavity. Place turkey in pan; cover with plastic wrap. Refrigerate 48 hours.

Day of roasting: Preheat oven to 450 degrees.
  1. Place turkey, breast side up, on rack in shallow roasting pan, drizzle with basting oil. Tuck wings under back of turkey. Cover turkey loosely with a "tent" of aluminum foil.
     
  2. Roast 15 min. Reduce oven to 350 degrees and roast; see table below for approximate cooking times. Check internal temp by inserting thermometer into thickest part of inner thigh area where leg connects to body of bird - but not touching the bone. Baste turkey with drippings; roast until internal temp reaches 165 degrees. We recommend using a digital thermometer for best results.
     
  3. Let rest 30 min before carving.

     Approximate roasting times in a 350 degree oven:
    Turkey Weight   Cooking time for Unstuffed Turkey
     8-12 lbs               2-1/2 to 3-3/4 hours
    12-16 lbs              3-3/4 to 5 hours
    16-20 lbs              5 to 6 hours
    20-24 lbs              6 to 7-1/4 hours
    24-28 lbs              7-1/4 to 8-1/2 hours
