Cornbread Apple Stuffing

Ingredients

1 1/2 Tbsp Vegetable Oil
1 pkg (12 oz) Breakfast Sausage
1 bag (8 oz) Food You Feel Good About Diced Celery and Onions
1/2 large (about 1/2 lb) red sweet pepper, diced small
2 medium (about 1-1/2 lbs total) Granny Smith apples; peeled, cored, diced medium
1 1/2 cups + 2/3 of a cup Food You Feel Good About Chicken Culinary Stock
1 pkg Corn Skillet Bread, broken up (Bakery)
1 tsp Herbes de Provence
1 Tbsp fresh parsley, chopped
Salt and pepper to taste

Directions

Preheat oven to 450 degrees.
  1. Heat oil in saute pan on MEDIUM until oil faintly smokes; add sausage and brown breaking into small pieces while cooking, about 5 min.
     
  2. Add vegetables; cook, stirring, until soft, 2-3 min. Add apples and broth; simmer until apples are crisp-tender, 2-3 min.
     
  3. Fold in cornbread crumbs, herbes, and parsley (mixture will be quite wet). Season to taste with salt and pepper.
     
  4. Place in greased casserole; bake 30-45 min until lightly browned.
